Fried rice is one of the simplest Asian-inspired dishes you can easily make at home, and it's a great way to use up leftover rice from last night's dinner, or even the day before. This recipe features white rice stir-fried with onions, bell peppers, and canned pineapple chunks, along with leftover slices of spicy pepperoni and mozzarella from a pizza, all tossed in a little pizza sauce. Top with basil and serve immediately to enjoy the crispy rice and sausage.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 3 cups of leftover cooked rice
- 2 tbsp. l. olive oil
- 1 package (150 g) mini pepperoni
- 1 medium onion, thinly sliced
- 1 green bell pepper, diced
- 2 cloves garlic, crushed
- 2 tbsp store-bought pizza sauce
- 1 teaspoon red pepper flakes
- 1 can (220g) canned pineapple chunks, drained
- 1 cup mozzarella pearls or diced mozzarella
- 1/4 cup fresh basil leaves

Cooking the dish according to the recipe:
- Heat olive oil in a cast-iron skillet over medium-high heat, then add pepperoni, onion, bell pepper, and garlic. Cook until the onion is soft and the pepperoni is slightly crisp, about 3 minutes. Add pizza sauce and red pepper, then toss to combine.
- Add the rice and cook, stirring, until crisp and browned in spots, 2-3 minutes. Stir in the pineapple to heat through and coat. Cook for about another minute. Turn off the heat, then add the mozzarella, stirring constantly. Tear half the basil and add it to the pan. Taste and season with salt and pepper if needed.
- Serve the fried rice immediately, garnished with the remaining basil.
