A Chinese-style dish of stir-fried beef and broccoli florets. For this dish, use flank steak, an inexpensive cut from under the belly, too tough for steak but ideal for stir-frying in small pieces, thinly sliced ​​across the grain. Stir-fry the broccoli, then the meat, one at a time, over high heat for a couple of minutes, ensuring it remains a pleasant green color and crisp. Prepare a separate Asian sauce and combine the beef and broccoli. To avoid over-salting the dish, use only low-sodium soy sauce and broth. The meat and vegetables are simply delicious, coated in a delicious, sticky sauce. It's best served with Chinese noodles.


Ingredients:

  • 450g flank steak, trim fat, thinly slice meat across the grain
  • 450 g broccoli florets
  • 0.5 cups lightly salted soy sauce
  • 1/4 cup cornstarch
  • 3 tbsp sherry
  • 2 tbsp. l. brown sugar
  • 1 tbsp. chopped fresh ginger
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 3 tablespoons peanut or olive oil
  • 1/4 cup beef broth
  • 1/4 cup oyster sauce
  • Chow mein noodles, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a bowl, combine the soy sauce, cornstarch, sherry, brown sugar, ginger, onion, and garlic. Pour half of the liquid over the chopped meat in the bowl and mix with your hands. Set the remaining sauce aside.
  • Step 2
  • Heat vegetable oil in a heavy-bottomed skillet (preferably cast iron) or wok over high heat. Add the broccoli and cook, stirring, for about a minute. Transfer to a plate.
  • Step 3
  • Heat the pan again to high heat. Using tongs, place the pieces of meat in a single layer. You can move the pieces around as you add others, but do not stir them for a minute (you want the meat to be well-seared in a short period of time). Flip the meat over and cook for another 30 seconds. Transfer to a clean plate.
  • Step 4
  • Pour the remaining sauce into the pan, add the beef broth and oyster sauce. Cook over high heat until the mixture begins to thicken. Add the beef and broccoli and stir thoroughly to coat. Season with salt if needed.

    Serve the beef steak and broccoli with chow mein noodles.
