Stewed shiitake mushrooms - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 30 fresh shiitake mushroom caps
  • 2/3 cup sake
  • 4 tablespoons soy sauce
  • 2 tbsp mirin
  • 2 tablespoons of sugar

Cooking the dish according to the recipe:


  1. Wash the mushroom caps and trim the stems. Combine the sake, soy sauce, mirin, and sugar in a saucepan and bring to a boil. Reduce the heat to a simmer and add the mushrooms.
  2. Stewed Shiitake Mushrooms

  3. Simmer for 7 minutes. Remove the mushrooms and use immediately for the salad (see recipe). Salad with fish, ginger and shiitake), or serve with meat.
