To ensure crispy, delicious fried tofu, first squeeze out as much liquid as possible. Wrap the tofu block in a clean kitchen towel and press it under a press (a cast iron skillet will do). Another secret to a perfectly crispy crust is panko breadcrumbs. They're coarser than regular breadcrumbs and produce a fantastic result. When frying the tofu, resist the temptation to flip the pieces prematurely. Wait until the crust is nicely browned. Serve the tofu drizzled with Asian-inspired sauce and sprinkled with green onions.

  • 0.5 cup panko breadcrumbs
  • 2 tablespoons white sesame seeds
  • 1 tbsp cornstarch
  • 1 teaspoon garlic salt

Preparation:

    Step 1
  • Wrap the tofu in a clean kitchen towel and place it on a wire rack set over a rimmed baking sheet. Place a heavy skillet on top of the tofu and press it down for 5 minutes to release as much liquid as possible. Unwrap the tofu and slice it lengthwise into 1-cm-thick, 4-cm-long strips.
  • Step 2
  • In a small bowl, combine the soy sauce, lime juice, agave syrup, white part of the green onion, and Sriracha sauce and set aside. Mix in a shallow dish. panko breadcrumbs, sesame seeds, cornstarch, garlic salt, onion powder, 0.5 tsp coarse salt and a little freshly ground black pepper.
  • Step 3
  • Press the tofu bars into the breadcrumb mixture to coat them on all sides.

  • Heat olive oil in a large skillet over medium-high heat. Add the tofu and cook, without moving, until golden brown, 4-5 minutes. Flip the tofu with a metal spatula and continue cooking, without moving, until crisp, another 4-5 minutes. Transfer to a serving platter.
  • Step 5
  • Reduce heat to low and add the soy sauce mixture to the pan. Bring to a simmer and cook until the sauce thickens slightly, 1-2 minutes. Drizzle the sauce over the tofu strips and sprinkle with green onions.
