The Asian technique of stir-frying (frying over high heat while stirring frequently) has stood the test of time. It's an excellent way to quickly and without excess fat cook vegetables and meat cut into small pieces. The key when stir-frying is to prepare all the ingredients in advance and place them near the stove to avoid distractions. Broccoli stir-fry can be cooked in a large nonstick skillet, but a wok is ideal: carbon steel and cast iron withstand high temperatures well, and the wok's rounded shape makes frying easier and faster.


Ingredients:

  • 1 large head of broccoli (about 0.7 kg)
  • 2 tablespoons soy sauce
  • 1 tbsp cornstarch
  • 1 teaspoon of sugar
  • 2 tbsp + 1 tsp vegetable or peanut oil
  • 1 green onion, chopped
  • 2 - 3 cloves garlic, chopped (about 2 tsp)
  • 2.5 cm ginger root, peeled and finely chopped (about 2 tsp)
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp. dark sesame oil
  • Cooked white or brown rice, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Separate the broccoli head into florets and cut them into 2-4 cm pieces. Peel the broccoli stems with a vegetable peeler, removing the tough outer skin, and cut into 0.5 cm thick slices. Set aside.
  • Step 2
  • In a small bowl, combine 1/2 cup water, soy sauce, cornstarch, and sugar. Set aside.
  • Step 3
  • Heat a large wok over high heat. Add 2 tablespoons of vegetable oil and swirl the wok to coat. Once it begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until the edges are golden brown, about 2 minutes. Add 2 tablespoons of water and steam the broccoli, stirring constantly, until tender, about 2 minutes more.
  • Step 4
  • Push the broccoli toward the edges of the pan, creating a hollow in the center. Add the remaining 1 teaspoon of vegetable oil, then the green onions, garlic, ginger, and pepper and stir until fragrant, 30-45 seconds. Add the soy mixture and stir until the sauce thickens and the broccoli is glazed, about 30 seconds. Remove from heat, add the sesame oil, and stir to coat evenly. Serve the broccoli with rice.
