This side dish beautifully combines vibrant flavors and contrasting textures. Juicy roasted broccoli is paired with crisp-on-the-outside, tender-on-the-inside roasted chickpeas and sweet golden raisins, all served with a cilantro-tahini yogurt dressing.


Ingredients:

  • 8 cups broccoli florets
  • 1/4 cup roasted chickpeas
  • 1/4 cup golden raisins
  • 1/4 cup yogurt
  • 1 tbsp tahini
  • 1 tbsp lemon juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Toss 8 cups broccoli florets with 2 cups olive oil, 3/4 teaspoon coarse salt, and a few grinds of black pepper on a baking sheet. Grill until lightly charred, 6 to 8 minutes.
  • Step 2
  • Combine 1/4 cup whole-milk yogurt and chopped cilantro, 1 tablespoon each olive oil, tahini, and lemon juice, and a pinch of salt and black pepper. Drizzle the dressing over the broccoli and top with 1/4 cup each golden raisins and roasted chickpeas.
