Pan-fried chicken with broccoli

Even two simple ingredients like chicken breast and broccoli can create a delicious Asian dish by stir-frying them. Additional ingredients include spices, ginger, garlic, soy sauce, vegetable oil, sherry, and cornstarch to thicken the Asian sauce. Prepare a marinade for the chicken and let the breast soak briefly while you chop the broccoli. Both the florets and stems will be used, adding even more flavor to the dish. Then, stir-fry the ingredients in a hot pan, stirring frequently, and combine them with the sauce. Sprinkle the finished dish with sesame seeds; this is optional, but they make the dish look much more appetizing.

Ingredients:
- 450 g chicken breasts (about 2 pcs.), diced
- 3 green onions, white parts only, thinly sliced diagonally
- 2 cloves garlic, crushed
- 2.5 cm peeled ginger root, finely chopped
- 1 tbsp soy sauce
- 2 tablespoons of sugar
- 1 tbsp + 1 tsp cornstarch
- 1 and 1/4 teaspoons salt
- 1 tbsp. l. dry sherry
- 1 tbsp dark sesame oil
- About 1/3 cup water
- 3 tablespoons of vegetable oil
- 5-6 cups broccoli, stems trimmed and florets removed (separate)
- 1 tsp red pepper flakes (optional)
- 1 tbsp hoisin sauce
- For sprinkling: toasted sesame seeds (optional)
- For serving: jasmine rice
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:
- Step 1
- In a medium bowl, combine the chicken with the onion, half the garlic and ginger, soy sauce, sugar, 1 teaspoon cornstarch, 1 teaspoon salt, sherry, and sesame oil. Let marinate at room temperature for 15 minutes. Mix the remaining cornstarch with 1/3 cup water. Step 2
- Heat a large nonstick skillet over high heat. Add 1 tablespoon of vegetable oil and heat until hot. Add the broccoli stems and stir-fry for 30 seconds. Add the broccoli florets and the remaining garlic, ginger, 2 tablespoons of water, 1/4 teaspoon of salt, and a little pepper. Cook until the broccoli is bright green but still crisp, about 2 minutes. Transfer to a plate. Step 3
- Heat the pan again and add another 2 tablespoons of vegetable oil. Add the chicken and red pepper flakes, if using. Cook, stirring, until the chicken is lightly browned, about 3 minutes. Add the soy sauce, return the broccoli to the pan, and stir to heat through. Step 4
- Stir in the reserved cornstarch mixture and bring to a boil until thickened. If needed, add a little water to thin the sauce. Taste and season with salt and pepper if needed. Transfer the stir-fry to a serving platter or divide among 4 plates and sprinkle with sesame seeds; serve with rice.
Note
To save time, you can chop the garlic and ginger together in a mini chopper. If desired, and if you enjoy the onion flavor, you can sprinkle the finished dish with green onions. Broccoli stems (high in fiber) add texture and volume to the dish—and why throw them away?
