Paula Deen makes this classic South American version of chicken fries by dipping the chicken pieces in a batter made from eggs and hot sauce, coating them in flour, and frying them until golden brown and crispy.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 eggs
  • 1/3 cup water
  • About 1 cup hot red pepper sauce
  • 2 cups of wheat flour
  • 1 teaspoon pepper
  • Homemade seasoning, see recipe below
  • 1 chicken, cut into pieces (0.5-1 kg)
  • Vegetable oil for frying

Homemade seasoning:

  • 1 tbsp. salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Cooking the dish according to the recipe:


  1. In a medium bowl, whisk the eggs and water. Add enough hot sauce to turn the egg mixture bright orange. In another bowl, combine the flour and pepper. Sprinkle the chicken with the homemade seasoning. Dip the prepared chicken in the egg batter, then coat thoroughly in the flour mixture.
  2. Heat oil in a deep frying pan to 180°C. Do not fill the pan more than 1/2 way.

  3. Fry the chicken in oil until browned and crispy. Dark meat takes longer to cook than light meat. For dark meat, the cooking time is approximately 13-14 minutes; for white meat, the cooking time is approximately 8-10 minutes.
  4. Homemade seasoning:

    Mix all ingredients and store the seasoning in an airtight container for up to 6 months.
