A second course recipe made with cooked rice, bacon, scrambled eggs, and broccoli, fried in bacon grease and then simmered with soy sauce. Topped with cilantro and jalapeño.

  • 2 cups polished rice (preferably short-grain or sushi rice)
  • 6 slices bacon, cut into strips
  • 1 head of broccoli, florets cut into pieces, soft part of the stem cut into slices

  • 1.5 tsp. sesame oil
  • 4 large eggs
  • Coarse salt
  • 3 tbsp chopped fresh cilantro
  • 2 feathers green onion, cut into rings
  • 2 tablespoons sliced ​​pickled jalapeño peppers

Preparation:

    Step 1
  • Pour 2.5 cups of water into a medium saucepan, add the rice, and bring to a boil. Cook the rice over medium heat, covered, until most of the water is absorbed, about 6 minutes. Reduce the heat to low and continue cooking for another 12 minutes. Remove from the heat and leave the rice in the saucepan until serving.
  • Step 2
  • Meanwhile, fry the bacon in a large skillet over medium heat until crisp, about 10 minutes. Transfer the bacon to a paper towel-lined plate. Reserve about 1 tablespoon of the rendered fat in the skillet and increase the heat to medium-high.

    Add the broccoli and cook, stirring occasionally, until browned. Add 3/4 cup water and continue cooking until the broccoli is crisp-tender and the liquid has almost evaporated, about 3 minutes. Stir in the soy sauce and 1/2 teaspoon sesame oil. Divide the rice and broccoli among bowls and drizzle with the remaining sauce.
  • Step 3
  • Heat 1 teaspoon of sesame oil in a frying pan over medium-high heat. Crack the eggs into the pan, sprinkle with salt, and fry until doneness is desired. Place the fried eggs on top of the vegetables and rice and garnish with bacon, cilantro, green onions, and pickled peppers.
