Place cooked brown rice in a deep bowl and top with the remaining ingredients. For a more interesting breakfast, replace the hard-boiled egg with a poached egg.

- 1 cup lightly salted chicken broth
- 2 tablespoons lightly salted soy sauce
- 2 tbsp. l. rice vinegar
- 1 tbsp light brown sugar
- 2 green onions, thinly sliced, white parts separated from green parts
- 1 medium carrot, grated
- 2 tsp. dark sesame oil

- Step 1
- In a small saucepan, cover the eggs with about 2 cm of water. Bring to a vigorous boil, cover, and remove from heat. Let stand for 8 minutes. Then place under running cold water; peel and quarter each egg. Step 2
- Meanwhile, place the bacon in a large skillet and cook over medium heat until golden brown and crispy, about 4 minutes per side. Remove the bacon from the skillet and chop into small pieces. Step 3
- In a large microwave-safe bowl, combine the chicken broth, soy sauce, vinegar, brown sugar, 3/4 teaspoon salt, and a few grinds of freshly ground black pepper. Add the rice, broccoli, and white onion and stir. Cover and microwave on high power, stirring occasionally, until the broccoli is crisp-tender and the rice is heated through, about 6 minutes. Step 4
- Divide the broccoli rice among four bowls. Top with a quarter of each egg, bacon, carrots, and green onions. Drizzle each serving with sesame oil. You can add fried eggs to this. bowl with rice, broccoli and bacon.
