Turkey bacon is thin strips of smoked turkey thigh, not as fatty as traditional pork bacon, but just as delicious and crispy when baked. This recipe weaves turkey bacon strips into a lattice pattern, creating a perfect topping for a classic broccoli quiche. Use store-bought dough for this quiche, and it's a joy to make.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 sheet chilled pie dough (from a 400g package)
  • 11 strips turkey bacon
  • 1 cup grated cheddar (about 100 g)
  • 2/3 cup milk
  • 10 large eggs
  • 150 g frozen broccoli florets

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C. Unroll the pie dough and place it in a 22cm pie pan.
  2. Place 6 strips of bacon, one above the other, in a square on a baking sheet; the edges should touch but not overlap. Next, working with one of the remaining strips at a time, weave them together at the top and bottom to create a lattice.

  3. In a medium bowl, combine the cheddar, milk, eggs, broccoli, 1 teaspoon salt, and a pinch of freshly ground black pepper. Spread over the batter in the pan. Bake the bacon rack and quiche on separate baking sheets until the bacon is just beginning to crisp and the quiche is slightly set but still jiggly in the center, about 15 minutes.
  4. Using two spatulas, transfer the bacon rack to the top of the quiche. Continue baking until the bacon is crispy and the quiche is completely set, another 15-20 minutes. Let rest for 10 minutes, then serve.
