This hearty, juicy cheeseburger is made with two thick turkey patties topped with melty cheese and crispy pieces of fried turkey bacon. Served on a toasted English muffin with a warm, fire-roasted tomato sauce.

Ingredients:

  • Extra-virgin olive oil, to drizzle + 1 tbsp.
  • 8 slices turkey bacon
  • 2.1 kg ground turkey breast
  • 2 green onions, thinly sliced
  • A handful of cilantro, leaves finely chopped
  • 1 tbsp ground chipotle pepper
  • 1.5 tsp smoked sweet paprika
  • 2 tsp zest and juice of 2 limes
  • 1 red onion, chopped
  • 1 tbsp Worcestershire sauce
  • 2 tbsp. l. brown sugar
  • 1 can (425g) canned roasted diced tomatoes, drained slightly
  • 2 tbsp. grainy mustard
  • 8 slices Pepper Jack cheese
  • 4 large English sandwich muffins, lightly toasted
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large nonstick skillet over medium heat, heat a little olive oil and add the turkey bacon. Cook until crispy, about 3 minutes per side, then transfer to a plate.
  • Step 2
  • Meanwhile, combine the ground beef, green onions, cilantro, chipotle pepper, paprika, salt and black pepper, lime zest and juice. Divide into 4 portions and form each portion into 2 patties. Place the first 4 patties in the skillet; cook for 3–4 minutes on each side. Remove from the skillet to a plate and cover loosely with foil to keep warm.
  • Step 3
  • While the first batch of patties is frying, heat 1 tablespoon of oil in a saucepan over medium-high heat. Add the onion and sauté for 3-4 minutes. Season with salt and pepper, then add the Worcestershire sauce, brown sugar, tomatoes, and mustard. Reduce the heat to a simmer.
  • Step 4
  • Place the second batch of patties in the pan and cook for 3-4 minutes per side. Top with a slice of cheese and 2 slices of bacon. Cover the pan with foil and cook over low heat until the cheese melts, about 1 minute.
  • Step 5
  • Place the patties on the bottom halves of the buns. Top with the bacon and cheese patties, tomato sauce, and top with the top halves of the buns.
