Even if you prefer grilled burgers, this recipe will become your go-to option any time of year. You don't have to form ground meat into patties. Instead, flatten the meatballs with a spatula directly in a hot cast-iron skillet to create a juicy patty with a crispy crust and ridged edges. Ingredients:

  • 1/4 cup mayonnaise
  • 2 tbsp. ketchup
  • 2 tbsp mustard
  • 2 tablespoons pickled cucumber relish
  • 1 tbsp. apple cider vinegar
  • 8 thick slices of bacon
  • 4 sesame seed hamburger buns, cut in half
  • 900 g of ground beef with 20% fat content
  • 4 thin slices sharp white cheddar
  • 4 thin slices red onion
  • 8 thin slices of tomato
  • A quarter head of iceberg lettuce, shredded
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Combine mayonnaise, ketchup, mustard, relish, and vinegar in a small bowl; set aside.
  • Step 3
  • In a large cast-iron skillet over medium heat, cook the bacon (in batches if necessary), turning once, until golden and crisp, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Drain the rendered fat from the skillet (or save it for another use) and wipe the skillet clean, but do not wash it. Heat the skillet over medium-high heat until very hot, about 5 minutes.
  • Step 4
  • Place the buns cut-side up on the baking sheet with the bacon and bake until toasted, about 5 minutes.

  • Form the ground beef into 4 balls. Place one ball in the pan and press firmly with a wide metal spatula to flatten for 10 seconds, then carefully remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining meatballs. Fry the patties, without turning, until well browned on the bottom, 2-3 minutes.
  • Step 6
  • Flip the patties, sprinkle with more salt, and top with a slice of cheddar. Continue cooking until the cheese melts around the edges and the patties are golden brown on the bottom, another 2 minutes.

  • Spread the mayonnaise mixture on the top halves of the buns. Serve the patties on the bottom halves, topped with fried bacon, onions, tomatoes, and lettuce.
