Recipe for poached dandelion greens or watercress with bacon

Peel and finely chop 2 bunches dandelion greens, watercress or young kale. Fry 3 slices of bacon until crisp and drain with a slotted spoon on paper towels. Add 1 minced garlic clove and 1 minced shallot to the rendered fat. Cook, stirring, for 1 minute.

Add 3 tbsp. wine vinegar and 1 tablespoon of sugar. Stir thoroughly until the sugar dissolves. Add the greens in batches and cook, stirring, until slightly wilted. Season with salt and pepper. Sprinkle with bacon.
