This light and refreshing salad is made with succulent bib lettuce leaves, while fresh parsley, basil, dill, and mint infuse it with a riot of flavor. It's best to tear all the greens and lettuce by hand rather than chopping them to preserve their valuable vitamins. Lemon juice and olive oil make a perfect dressing. Simple and quick, it makes a wonderful side dish for gourmet steaks or any other meat dish, adding juiciness and flavor without adding extra calories.
