Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Brush both sides of the tortillas with 1 tablespoon of vegetable oil. Stack the tortillas and cut them into quarters. Place the chips in a single layer on a baking sheet and bake, rotating the baking sheet halfway through, until crisp and just beginning to brown, 14-16 minutes. Leave the oven on.
  • Step 3
  • Meanwhile, combine the pickles and onions in a small bowl and set aside. Heat the remaining oil in a medium skillet. Add the ground beef and 1/2 teaspoon salt and cook over medium heat, breaking the ground beef into small pieces and stirring occasionally, until browned and cooked through, 8-10 minutes. Add 16 slices of American cheese and cook, stirring frequently, until the cheese melts, 2-3 minutes.
  • Step 4
  • Divide the beef mixture evenly among the tortilla chips. Place one slice of American cheese on top of the beef on each chip and bake until the cheese is melted, 4-5 minutes. Sprinkle each serving evenly with the pickles, then top with the bacon. Top with a drizzle of ketchup and mustard and serve.
