The perfect meat topping for nachos is made from several types of ground meat. Take ground beef and mix it with raw Mexican chorizo without the casing (not to be confused with Spanish chorizo!), sauté in a spiced tomato sauce, and you've got a juicy, rich topping! Spread it over corn tortilla chips, sprinkle with grated cheese, and bake in the oven until the cheese melts.
