Mexican Nachos Dip is perfect for an evening with family and friends, whether it's a fun party or watching a game. This recipe calls for making two separate servings of nachos. Layer tortilla chips, chicken breasts in a spicy sauce, and shredded cheese on each plate (or baking dish). Once the cheese has melted in the oven, top one serving with chopped tomatoes, green onions, olives, sour cream, and jalapeños. Make each layer slightly smaller than the previous one. This way, you can easily eat the nachos, removing one chip at a time, each filled with the delicious chicken sauce and melting, gooey cheese.


Ingredients:

  • 4 skinless, boneless chicken breasts (from 2 whole breasts)
  • 2 tbsp. taco seasoning
  • 2 tbsp. chili powder
  • 1/4 cup olive oil
  • 220 g tomato sauce
  • A little hot sauce
  • 1 large bag of tortilla chips
  • 3 cups grated cheddar (or to taste)
  • 1/4 cup pickled jalapeño rings
  • 1/4 cup chopped pitted black olives
  • 3 tomatoes, finely chopped
  • 3 green onions, finely chopped
  • 1/4 cup sour cream
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Sprinkle chicken breast fillets with taco seasoning and chili powder.

    Heat olive oil in a nonstick skillet over medium heat. Add the chicken breasts and sear on both sides until golden brown, about 5 minutes per side. Remove from the pan and set aside. Add the tomato sauce, hot sauce, and 2 cups of hot water to the skillet and bring to a simmer.

  • Shred the chicken breasts with two forks, then return the meat to the sauce in the skillet and simmer over low heat until heated through.

  • Assemble nachos two ways.

    Place a layer of tortilla chips on two ovenproof plates or in two baking dishes. Sprinkle with cheese, then add a layer of chicken; repeat two more times, making each layer smaller. The final layer should be cheese. Bake until the cheese is melted, 5-10 minutes.

  • Serve one portion as is. Top the other with a layer of jalapeño, black olives, tomatoes, green onions, and sour cream.
