The classic American Cobb salad consists of diced tomatoes, hard-boiled eggs, avocado, chicken breast, crumbled blue cheese, and bacon, which in this recipe is replaced with seared Black Forest ham. All ingredients are carefully arranged in parallel rows on a bed of watercress and romaine lettuce in a red vinegar vinaigrette. Served plain, the Cobb salad looks very vibrant and impressive. Drizzle with additional dressing and enjoy the magnificent combination of flavors and textures.

Ingredients:


Salad
  • 110 g thin slices of Black Forest or other smoked ham
  • 2 hard-boiled eggs
  • 6 cups romaine lettuce (about 170 g), coarsely chopped
  • 2 cups watercress, thick stems trimmed
  • 2 medium tomatoes, seeded and chopped (about 2 cups)
  • Half an avocado, diced (about 3/4 cup)
  • 1 cup boiled and diced chicken breast (1 breast weighing 170 g)
  • 0.5 cup crumbled Roquefort or other blue cheese (about 60 g)

Refueling
  • 3 tbsp. l. olive oil
  • 2 tablespoons red wine vinegar
  • 1 tbsp lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 small clove of garlic, crushed
  • 1/4 teaspoon salt
  • 1/4 tsp freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, combine all dressing ingredients and set aside.
  • Step 2
  • Cut the ham into 1/2-inch-wide strips. Spray a nonstick skillet with cooking spray and heat over medium heat. Add the ham to the skillet and cook, stirring frequently, until heated through and crispy, 3-5 minutes. Remove from heat and set aside.
  • Step 3
  • Remove the yolk from one hard-boiled egg. Chop the remaining egg white and the whole egg and set aside.
  • Step 4
  • In a large bowl, toss the romaine lettuce and watercress with two-thirds of the dressing. Arrange the dressed greens on a large serving platter. Arrange a row of tomatoes in the center. Layer the avocado, chicken, cheese, diced egg, and fried ham in strips on either side of the tomatoes. Drizzle with the remaining dressing and serve.
