Chicken Breast Fajita Salad in a Jar

Make chicken fajita into a healthy salad that's easy to take to work in a jar. It's easy to prepare: simply toss the chicken with vegetables and fajita seasoning on a baking sheet, bake, and arrange in jars, layering them with baked sweet potatoes and salad greens. Store the filled jars in the refrigerator for several days and serve each morning with a serving, adding your choice of toppings, such as grated cheese, sliced avocado, or cilantro.

Ingredients:
- 4 skinless, boneless chicken breasts (about 700 g)
- 2 red bell peppers, thinly sliced
- 2 zucchinis, thinly sliced
- 1 onion, thinly sliced
- 1 tbsp. l. olive oil
- 1 tbsp. fajita seasonings (without salt)
- 0.5 tsp salt
- 2 medium baked sweet potatoes, diced
- 3 cups salad greens of your choice
- To serve: avocado, cheese, cilantro, lime juice and sour cream (optional)

Preparation:
- Step 1
- Preheat oven to 220°C. Step 2
- Place the chicken, bell pepper, zucchini, and onion on a large baking sheet. Drizzle with vegetable oil, sprinkle with seasonings, and toss to coat. Bake, uncovered, until the chicken is cooked through, 20-25 minutes. Step 3
- To assemble, divide the chicken mixture, sweet potato, and salad greens in that order among four Mason jars. Store for 3-5 days. Top the greens with avocado, cheese, cilantro, lime juice, and sour cream, if using, in the morning.
Note
Bake the sweet potatoes ahead of time to serve as a snack throughout the week or use them in this salad. Alternatively, you can bake them with vegetables and chicken. Just add an extra 1 teaspoon of vegetable oil and seasoning.
