Fajita is a Tex-Mex dish made with chunks of meat and roasted vegetables served with other toppings on tortillas. The beauty of fajitas is that everyone can arrange their own fillings and toppings—perfect for a get-together! A fajita on a baking sheet for a large crowd can be prepared in less than 40 minutes, and it features three popular fillings: strip steak, chicken breast, and shrimp. Everything is cooked and served on one baking sheet, so you can relax: there won't be a mountain of dirty dishes. The hardest part is choosing your favorite toppings.


Ingredients:

  • 280 g boneless, skinless chicken breasts, cut into thin strips
  • 280 g striploin steak, cut into thin strips
  • 280 g medium shrimp, peeled, deveined and tailed
  • 700 g small sweet peppers (12-15 pcs.), cut in half, remove seeds and stems
  • 2 tbsp. chili powder
  • 1 large onion, halved and thinly sliced
  • 3 tbsp. l. olive oil
  • Juice of 1 lime + lime wedges for serving
  • 16 tortillas, warmed
  • Grated Monterey Jack cheese, guacamole, hot sauce, salsa, sour cream for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to grill mode. Line a baking sheet with foil.
  • Step 2
  • In a small bowl, combine the chili powder, 1 tablespoon salt, and 1 teaspoon black pepper. Place the bell peppers and onions on the prepared baking sheet, drizzle with 2 tablespoons olive oil, and sprinkle with half the chili powder mixture. Grill the vegetables until tender and just beginning to char, about 10 minutes.
  • Step 3
  • Meanwhile, place the chicken, beef, and shrimp in 3 separate bowls and toss each portion with the remaining 1 teaspoon olive oil and a third of the remaining chili powder mixture.

    Chef's tip:

    To make it easier to cut the steak into thin strips, place it in the freezer for 10 minutes until it becomes firmer.
  • Step 4
  • Once the peppers and onions have softened and begun to char, about 10 minutes, arrange the chicken, steak, and shrimp in rows on top of the vegetables. Return the pan to the oven and broil until the chicken, steak, and shrimp are cooked through and beginning to brown, 5-8 minutes depending on your grill. Drizzle with lime juice and serve with warmed tortillas, shredded cheese, guacamole, hot sauce, salsa, sour cream, and lime wedges.
