These Waldorf salad wraps with natural yogurt dressing and boiled chicken breast are a delicious and healthier alternative to shawarma for a mid-afternoon pick-me-up. For the dressing, it's best to use Greek yogurt, but in a pinch, you can strain the liquid from regular natural yogurt to thicken it.

Ingredients:

  • 1 cup nonfat plain yogurt or 3/4 cup nonfat Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tbsp lemon juice
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • 1 teaspoon chopped thyme
  • 450 g boiled skinless chicken breast, cut into 1 cm cubes.
  • 0.5 cup seedless grapes, halved
  • 1/4 cup toasted chopped walnuts
  • 1 medium apple, diced (about 3/4 cup)
  • 5 large romaine lettuce leaves, washed and dried
  • 5 whole grain tortillas, approximately 20 cm in diameter.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • If using regular yogurt, pour it into a strainer lined with a paper towel. Place it over a bowl and refrigerate until the liquid drains and the yogurt thickens, about 30 minutes.
  • Step 2
  • In a small bowl, combine yogurt, mayonnaise, lemon juice, mustard, salt, and thyme until smooth. Add the chicken, grapes, walnuts, and apples. Season with salt and pepper to taste.
  • Step 3
  • Place 1 lettuce leaf on the tortilla. Add about 3/4 cup of chicken salad and roll the tortilla into a log.
