All the vegetables in this salsa are grilled. Tomatoes, garlic, shallots, onions, and serrano peppers combine to create a delicious bouquet of flavors, which are even more intense when grilled outdoors. Simply peel them, blend them, add fresh cilantro and olive oil, and serve. Enjoy the salsa as an appetizer, scooping it up with corn chips, or serve it as a sauce for meat. If you like it spicy, add the chili peppers with the seeds. Otherwise, remove all the seeds and membranes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 6 plum tomatoes, cored and halved lengthwise
  • 4 cloves garlic, unpeeled
  • 1 serrano pepper, cut in half
  • 1 shallot, peeled and halved
  • Half a small onion, peeled and quartered
  • 2 tablespoons extra-virgin olive oil
  • 2 tbsp coarsely chopped fresh cilantro

Cooking the dish according to the recipe:


  1. Preheat the grill to medium-high heat. Place the tomatoes, garlic, chili, shallots, and onions, cut-side up, on a baking sheet. Drizzle the vegetables with olive oil and season with salt and black pepper.
  2. Transfer the vegetables to the grill and grill, turning occasionally, until charred, 8-10 minutes. Let the vegetables cool slightly. Peel the garlic and peel the tomatoes.

  3. Transfer the vegetables to a food processor, add the cilantro, and process until the sauce is finely chopped. Season with salt and pepper to taste. Serve immediately.
