Ingredients:
- 350 g skirt steak (beef flank), sliced
- 2 tablespoons soy sauce
- 2 teaspoons of sugar
- 4 green onions, thinly sliced (white and green parts separated)
- 2 cloves garlic, finely chopped
- 1 tsp. sesame oil
- 4 tsp vegetable oil
- 3 cups frozen brown rice, thawed
- 4 cups spinach
- 1 cup sprouted beans
- 4 large eggs
- Sriracha hot sauce for serving

- Combine soy sauce, sugar, scallion whites, garlic, and sesame oil in a large bowl; add the meat and marinate for 10 minutes. Heat a large skillet over high heat. Add the steak and marinade and season lightly with salt and pepper.
Cook without turning until the steak begins to brown around the edges, about 3 minutes. Stir and continue cooking until the meat is cooked through, about 2 more minutes. Transfer to a bowl.
Step 2 - Heat 2 teaspoons of vegetable oil in a frying pan. Add the rice, season with 1/2 teaspoon of salt, and cook, stirring occasionally, until lightly crisp, about 3 minutes. - Wipe out the skillet, place over high heat, and add the remaining 2 teaspoons of vegetable oil. Crack the eggs, season with salt, and cook until the whites are set but the yolks are still runny, about 3 minutes. Place an egg and green onions in each bowl. Drizzle with Sriracha sauce to taste.
