Green onions

Green onions aren't a specific type of vegetable. They're actually young onions. They're harvested as greens in early summer or spring, and later, as bulbs, in the fall. Green onions taste similar to onions, but their flavor is much milder.
When can I buy it?
Green onions are available year-round. They're also easy to grow at home, both in the garden and at home.
How to buy?
When buying green onions, look for firm, sturdy plants with vibrant greens. Avoid those with slimy or wilted greens. The bulbs can be white or reddish, small or large. You can safely choose both; they're all good, and their shape or color won't affect the flavor.
Culinary uses
Before using, wash green onions, trim off the roots, and remove any wilted parts. You can finely chop the greens with a knife or cut them into small pieces with kitchen scissors. If you want to use whole green onions, soak them in ice water for 30 minutes before garnishing your dish.
Shallots can be used instead of green onions in dishes.
Storage
Green onions don't store well. After purchasing, they should be refrigerated in a perforated bag. The longest they can last in this way is 4-5 days.
