Lean fish in a spicy sauce is the perfect dietary dish to treat yourself or your guests at a celebration.

Ingredients:

  • 6 pieces of salmon fillet, 170 - 225 g each.
  • 2 cloves of garlic
  • 3/4 tsp finely chopped rosemary leaves
  • 3/4 teaspoon finely chopped thyme leaves
  • 1 tbsp. dry white wine
  • 1 tbsp. l. olive oil
  • 2 tbsp mild mustard
  • 2 tbsp. grainy mustard
  • 6 lemon wedges
  • Coarse salt and freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a food processor, combine the garlic, rosemary, thyme, wine, olive oil, mustard, and 1 tablespoon of grainy mustard. Blend the mustard sauce until thoroughly combined, about 30 seconds. Transfer to a small bowl. Add the remaining 1 tablespoon of grainy mustard to the sauce and pulse until smooth. Set the mustard sauce aside.
  • Step 2
  • Preheat oven to high. Line a baking sheet with foil. Spray the foil with nonstick spray. Place the salmon fillets on the baking sheet and season with salt and pepper. Roast for 20 minutes. Spoon the mustard sauce over the fillets. Continue roasting until the fillets are cooked through and golden brown, about 5 more minutes.
  • Step 3
  • Transfer the salmon fillets to plates and serve with lemon wedges.
