Your potato side dish will look very impressive and festive if you prepare it with whole small potatoes of different colors, such as red and white. New potatoes don't need to be peeled; their skins are very thin and contain a wealth of beneficial micronutrients. To ensure a neat side dish and even cooking, choose potatoes of similar size. When they're ready, simply toss them with chopped tomatoes and fresh herbs in a dressing of olive oil and butter.

Place 1 pound of the small potato mixture in a medium saucepan, cover with cold water, and season with salt. Bring to a boil; simmer until tender, 15 minutes. In a large bowl, combine 2 tablespoons of olive oil and 1 tablespoon of melted butter. Add 1 large chopped tomato and 1 tablespoon each of chopped parsley, chives, and basil. Drain the potatoes, transfer them to a bowl, and toss. Season with salt and pepper to taste.
