Vinaigrette sauce is a creation of French cuisine. Its basic ingredients are vinegar, oil, and spices. It can impart a spicy and sophisticated aroma to any dish, as well as a unique, distinctive flavor. Vinaigrette sauce is ideal for both meat and vegetable dishes.


Ingredients:


Chicken with potatoes
  • 4 chicken breasts on the bone (220 g each)
  • 12 peeled new potatoes
  • Sprigs of oregano and parsley, for garnish

Vinaigrette with Roasted Garlic and Oregano
  • 8 cloves of roasted garlic
  • 1/4 cup white wine vinegar
  • 2 tablespoons oregano leaves
  • 2 tablespoons parsley leaves
  • 1 tbsp. honey
  • 1/2 tsp salt
  • 3/4 cup olive oil
  • 1/4 tsp red pepper flakes
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Vinaigrette with Roasted Garlic and OreganoPlace the roasted garlic, vinegar, oregano, parsley, honey, and salt in a blender and blend until smooth. Slowly add the oil while blending and continue blending until emulsified. Add the red pepper flakes.
  • Step 2
  • Place the potatoes in a medium saucepan, cover with cold water, and add 1 tablespoon of salt. Bring to a boil over high heat and cook until tender but still slightly raw. Don't cook them all the way through, as they will need to be grilled first. Drain the water, and when the potatoes are cool enough to handle, cut them in half lengthwise.

  • Preheat grill to medium heat.

  • Grilled chicken breasts and potatoesBrush the chicken breasts and potatoes with oil and season with salt and pepper. Place the meat on the grill, skin side down, and grill for 6-7 minutes, until golden brown and slightly charred.

    Flip the chicken and continue grilling for 5-6 minutes, until cooked through. A few minutes before the chicken is done, add the potatoes, cut side down, and grill for 2 minutes, until lightly golden brown. Flip and continue grilling for about a minute.

  • Transfer the chicken and potatoes to a serving platter and immediately drizzle with the roasted garlic and oregano vinaigrette. Let rest for 5 minutes before serving. Garnish with oregano and parsley sprigs.
