Extra-virgin olive oil imparts a subtle, distinctive, vegetable-like flavor to the mashed potatoes, which is perfectly complemented by fresh herbs. Chives, parsley, and dill are the perfect combination for this side dish. Serve with any meat or fish.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 900 g potatoes, unpeeled
  • 1 cup whole milk
  • 0.5 cups olive oil
  • 2 tbsp chopped fresh chives
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley

Cooking the dish according to the recipe:


  1. Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  2. Peel the potatoes and return them to the pan (if desired, puree them using a vegetable grinder or potato masher). Mash the potatoes with milk and olive oil using a fork or potato masher. Add chives, dill, parsley, and 2 teaspoons of salt; season with pepper to taste.
