Even with just potatoes and sour cream, you can make a stunningly delicious and beautiful side dish worthy of a holiday table. These are Hasselback potatoes, which originated in Sweden. Or, more simply, accordion potatoes, where whole potatoes are sliced ​​into thin, accordion-shaped slices and baked with spices and other ingredients in the oven. The simplest recipe is to make the accordion and roll it in vegetable oil, sprinkle with salt and pepper, and insert a few slices of garlic between the slices. The aroma will be indescribable. Serve the garlic Hasselback with a dollop of sour cream mixed with finely chopped herbs. Very simple, yet delicious and presentable.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Accordion potatoes

  • 450 g red new potatoes
  • 3-5 cloves garlic, thinly sliced
  • 4 tbsp (60 g) butter, melted
  • 2 tbsp. l. olive oil

Sour cream with herbs

  • 0.5 cup sour cream
  • 0.5 tsp garlic powder
  • 1 tbsp finely chopped parsley leaves

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C.
  2. Place each potato in a wooden spoon and make several parallel cuts on the top, using the spoon as a guide to avoid cutting all the way through. Place 3 slices into each cut. Roll in a bowl with butter and olive oil. Place on a baking sheet and sprinkle generously with salt and pepper. Bake until crisp and tender, about 1 hour. Transfer to a serving platter and top with sour cream and herbs.

  3. Sour cream with herbs:

    Combine all ingredients in a small bowl. Season with salt to taste and refrigerate until ready to use.
