These aromatic baked potatoes with their skins are incredibly crispy on the outside and creamy on the inside. The secret lies in pre-boiling them with baking soda, which quickly creates a delicious crust during baking. Pat the boiled potatoes dry and flatten them slightly to increase the surface area in contact with the hot baking sheet, which in turn increases the crispiness of the skin. Add garlic, fresh thyme, and rosemary for added flavor, and rub with olive oil. Everyone will love this side dish.


Ingredients:

  • 0.7 kg small potatoes
  • 1 tbsp. baking soda
  • 1/3 cup olive oil
  • 5 cloves garlic, unpeeled, crushed
  • Leaves of 5 sprigs of fresh thyme
  • Leaves of 1 sprig of fresh rosemary
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230°C.
  • Step 2
  • Add the potatoes to a large saucepan and cover with cold water to a depth of 2 cm. Add baking soda and 1 tablespoon of salt. Cover, set over medium heat, and bring to a boil. Remove the lid and continue cooking until the potatoes are tender when pierced with the tip of a knife, 15-20 minutes. Drain the potatoes in a colander and let them sit over the saucepan for a few minutes to dry out the outside.
  • Step 3
  • Place the potatoes on a baking sheet. Drizzle with olive oil and toss with the garlic, thyme, and rosemary until completely coated. Season generously with salt and pepper. Using a glass, gently crush each potato. The skin should crack slightly and the potato should flatten slightly.
  • Step 4
  • Bake in the oven until the potatoes are golden brown on the bottom, 20-25 minutes. Remove the baking sheet from the oven and turn the potatoes over with a spatula. Continue baking until the potatoes are golden brown on both sides, another 20-25 minutes. Transfer them to a serving platter with a spatula. Serve hot.
