Trim, peel, and halve 2.5 pounds (1.1 kg) medium beets; slice accordion-style as directed (see below). Place beets in a baking dish and drizzle with 3/4 cup olive oil; season with 1/4 teaspoon salt and a few grinds of pepper. Add 1 cup (1/4 cup) water and cover with foil. Bake at 425°F (220°C) for 40 minutes.

Uncover the beets and continue roasting for 30 to 40 minutes. Let cool slightly. Mix 1/2 cup plain Greek yogurt with 2 tablespoons chopped dill and lemon juice, 1 teaspoon salt, and ground pepper. Pour over the beets and sprinkle with crushed pink pepper.
