A crudité appetizer is a neat arrangement of raw, baked, or blanched vegetables with a dipping sauce. To avoid your vegetable platter looking like a messy salad, it's best to have a specific concept when assembling it, resulting in a beautiful, healthy, and delicious appetizer. For example, make a crudité with green vegetables, arranging them around a bowl of dill yogurt dip. Juicy cucumber sticks, lettuce leaves, roasted Brussels sprouts, and green beans and broccolini are perfect accompaniments, as are blanched green beans to soften them while retaining their juiciness and vibrant color. Pumpkin seeds, toasted in the oven with spices, make a delicious addition to the vegetables.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

  • Pumpkin seeds
  • Iranian cucumbers
  • Lettuce leaves
  • Brussels sprouts
  • Green beans
  • Green yogurt dip for serving

Recipe:


Green yogurt dip


In a food processor, combine 1 clove garlic, 1/4 cup each coarsely chopped mint, dill, and parsley, 1 chopped green onion, and 1 chopped anchovy. Add 2 cups plain Greek yogurt and process until smooth.

Broccolini


Trim and drop into boiling salted water for 3-4 minutes. Drain and transfer to an ice bath. Pat dry and sprinkle with salt.

Spicy pumpkin seeds


On a baking sheet, combine 1.5 cups shelled pumpkin seeds with 2 tablespoons melted butter, 1/2 teaspoon ground coriander, a pinch of cayenne pepper, and 3/4 teaspoon coarse salt. Bake at 400°F (200°C) until golden brown, about 5 minutes.

Iranian cucumbers



Lettuce leaves



Brussels sprouts


Trim the cabbage and cut in half; toss with olive oil, season with salt and bake in the oven at 200°C for 20 minutes.

Green beans


Trim and boil in salted water for 4 minutes, then transfer to an ice bath. Pat dry and season with salt.
