Gyros with pork and tomato-yogurt sauce - a detailed recipe.
Ingredients:
- 2 pieces of pork tenderloin (450 g)
- 4 grilled pitas, for serving
- 1/4 cup olive oil
- 1/4 cup dry red wine
- 4 chopped cloves of garlic
- Salt and ground black pepper
- Tomato-yogurt sauce (see recipe below)
- Mixed salad greens or young spinach shoots for serving
- Thinly sliced onion for serving
- 1 tablespoon finely chopped fresh oregano, plus more for garnish
Tomato-yogurt sauce:
- 0.5 l of natural yogurt
- 2 finely chopped cloves of garlic
- 2 tbsp capers (without brine)
- 1 tbsp finely chopped fresh oregano leaves
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- Salt and ground black pepper
- 1, finely diced plum tomato (remove seeds first)
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- Step 1
- In a baking dish, combine the oil, red wine, garlic, and oregano. Add the pork and turn it over to coat it completely with the oil mixture. Cover and marinate in the refrigerator for at least 4 hours or overnight. Step 2
- Preheat grill to high heat.
Remove the pork from the marinade and season with salt and pepper. Grill until golden brown on all sides and cooked through to an internal temperature of 150°F (66°C). Let rest for 5 minutes, then slice into 0.5 cm (1/4 inch) thick slices.
Step 3 - Assemble the gyros by drizzling each pita with yogurt sauce, then adding the salad greens, red onion, and meat. Drizzle with more sauce and sprinkle with oregano.
Tomato-yogurt sauce: Mix all ingredients, cover and refrigerate for at least 30 minutes before serving.
