If you love traditional falafel but aren't a vegetarian, try making it with turkey. Its subtle flavor won't overpower the classic chickpea flavor. To make things easier, buy natural raw turkey sausage, remove the casings, and add it to the chickpea mixture. Falafel is first pan-fried until crispy, then finished in the oven. Serve with a light romaine lettuce and drizzled with yogurt and hot sauce.


Ingredients:

  • 250 g raw turkey sausage
  • 2 tbsp. l. olive oil
  • 1 can (425 g) canned chickpeas, rinsed
  • Half a medium onion, diced, 2/3 cup
  • 2 cloves garlic, finely chopped
  • 1 teaspoon cumin
  • 0.5 cups premium flour
  • 0.5 tsp baking powder
  • 1 cup Greek yogurt
  • 2 tablespoons lime juice
  • 2 Romano hearts, sliced
  • Hot sauce
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Combine the chickpeas, onion, garlic, cumin, 1 teaspoon salt, and 1/2 teaspoon black pepper in a food processor and pulse until finely chopped. Sprinkle with flour and baking powder, then pulse until smooth. Transfer to a medium bowl and add the sausage, mixing with your hands.

  • Cover and refrigerate for 30 minutes to allow the mixture to set slightly.
  • Step 4
  • Scoop 1 tablespoon of the cooled meat mixture into balls and, using wet hands, form them into 2.5 cm (1-inch) balls. Heat the olive oil in a large skillet over medium heat. Add the falafel balls and cook in two batches until lightly browned, about 1.5 minutes per side. Transfer to a baking sheet and bake in the oven until cooked through, about 10 minutes.

  • In a bowl, combine yogurt, lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Divide the romaine lettuce among 4 serving bowls, then drizzle with the yogurt sauce. Divide the falafel among the bowls and serve with the hot sauce.
