Flavorful grilled corn makes for a fun appetizer, more than just a salt-sprinkled cob. Combine roasted garlic with chopped tomato, grated Parmesan, and fresh thyme and spoon the topping directly onto the hot corn. A great picnic idea for entertaining while the meat cooks.

Trim the tops of 2 heads of garlic; drizzle with olive oil and sprinkle with salt. Wrap in foil and bake in the oven at 350°F (175°C) for about 40 minutes. Squeeze the garlic and toss with 1 grated tomato and 2 tablespoons grated Parmesan cheese, season with salt, pepper, and fresh thyme. Grill 4 ears of corn, turning, for about 12 minutes. Top with the tomato mixture before serving.
