Boiled corn doesn't necessarily have to be whole on the cob as an appetizer. It's much more appealing served cut into small discs, which, after boiling, are mixed with garlic mayonnaise and grated Parmesan. To make garlic mayonnaise, simply stir in garlic sautéed in olive oil. Its creamy, spicy flavor pairs perfectly with corn topped with melted, gooey cheese.

In a skillet over medium heat, sauté 1 tablespoon finely chopped garlic in olive oil until softened, 1 minute; transfer to a large bowl. Stir in 1 tablespoon mayonnaise and season with salt. Cut 2 ears of corn into 8 pieces each. Cook in salted boiling water until tender, 2-3 minutes; drain, then toss the corn pieces with the garlic mixture and grated Parmesan.
