Corn on a stick, or elote (Spanish: elote Corn (or corn) is a popular street snack in Mexico. Moreover, it's not simply served with salt; it's prepared with a distinctive local flavor. Corn on the cob is grilled and topped with mayonnaise, cheese, chili pepper, and a drizzle of lime juice. This corn makes a great picnic treat. Prepare it Mexican-style and enjoy the vibrant flavors of this distinctive cuisine.


Ingredients:

  • 4 corn on the cob, cleared of leaves
  • Vegetable oil for greasing
  • 1/4 cup mayonnaise
  • 0.5 cup crumbled cotija cheese
  • Ancho spice mix for sprinkling
  • Lime wedges, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Soak 4 wooden skewers in water for 30 minutes. Preheat the grill to high heat.
  • Step 2
  • Insert a skewer into each ear of corn. Brush the corn with vegetable oil. Grill, turning, until browned on all sides, 8-10 minutes.
  • Step 3
  • Spread mayonnaise on the grilled corn and sprinkle with cheese. Sprinkle with spice mix with ancho and serve with lime wedges.
