These delicious fried potatoes are prepared in two stages: first, they're boiled in salted water until half-done, then fried in a mixture of butter and olive oil with spices and onions. This way, you'll spend less time frying, the potatoes will be perfectly tender on the inside, and each piece will be covered in a delicious golden crust. The spices you'll need include onion, garlic, paprika, and fresh parsley.

- 0.9 kg large red or yellow potatoes, peeled and cut into 1 cm pieces.
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- Half an onion, chopped
- 0.5 tsp paprika
- 1 clove of garlic
- 1/4 cup fresh parsley

Cooking the dish according to the recipe:
- Bring a large saucepan of salted water to a boil. Add the potatoes, cover, and cook over medium-high heat until tender, about 6 minutes; drain.
- In a large cast-iron skillet, heat the butter and olive oil over medium heat; add the potatoes and spread them out in a single layer. Cook, undisturbed, until browned on the bottom, about 5 minutes. Add the onion and sprinkle with paprika, stir the potatoes, and cook for another 5 minutes. Stir once more, then continue cooking until the potatoes are golden brown, about 5 minutes more.
- Meanwhile, coarsely chop the garlic, sprinkle with parsley and 1 teaspoon of salt. Grind everything together. When the potatoes are done, add the garlic mixture to the pan and stir to distribute evenly; fry for about 2 more minutes. Season with salt and pepper to taste.
