- 1/3 cup olive oil
- 1 lemon
- 1 kg Brussels sprouts, trimmed and cut in half (large ones – into quarters)
- 4 cloves garlic, thinly sliced
- 1/4 cup coarsely chopped fresh chives

Preparation:
- Step 1
- Preheat the oven to broil. Pour olive oil into a small skillet. Using a vegetable peeler, peel the lemon zest in wide strips, being careful not to cut into the white pith. Add the zest to the olive oil and heat over medium heat until shimmering, about 5 minutes. Remove from heat and let cool. Step 2
- Place the Brussels sprouts on a rimmed baking sheet and drizzle with olive oil, reserving the zest in the pan. Toss the Brussels sprouts and spread them out in a single layer (it's okay if a few leaves fall off). Sprinkle with 1 teaspoon of salt and a few turns of black pepper. Step 3
- Grill the Brussels sprouts, stirring frequently, until tender and charred in spots, 12-15 minutes. Meanwhile, thinly slice the remaining lemon zest; add it to the Brussels sprouts along with the garlic 2 minutes before the sprouts are done. Transfer to a bowl, add the chives, and toss. Season with salt and pepper to taste.
