Accordion potatoes, or Hasselback potatoes, are a great way to serve a side dish with flair. Each serving consists of one potato, deeply sliced ​​into an accordion shape, brushed with a mixture of butter, olive oil, and green onions, baked until crisp, and served just like that. They look very appetizing. For cooking, choose long potatoes, and for neat slicing, place them between two chopsticks. You can use this recipe as a base and customize it with your favorite spices and herbs.


Ingredients:

  • 6 medium potatoes, washed with a brush
  • 110 g softened butter
  • 0.5 cups olive oil
  • 1/3 cup chopped chives
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230°C.
  • Step 2
  • In a small bowl, combine the butter, olive oil, green onions, and some salt and black pepper.
  • Step 3
  • Place the potato between the handles of two wooden spoons or two chopsticks. Slice the potato thinly, leaving 0.5 cm from the bottom; the spoon handles will prevent you from cutting the potato completely. Repeat with the remaining potatoes.
  • Step 4
  • Place the potatoes on a baking sheet and brush with the oil mixture, making sure to get into all the cuts. Bake until tender and crispy, 55-60 minutes.
