Perfect French fries - a detailed recipe.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- 1200 gr. potatoes with brown skin
- Vegetable oil, for frying
- Sea salt
- Mixed ketchup and mayonnaise, for serving

Cooking the dish according to the recipe:
- Peel and rinse the potatoes, cut into 12 mm thick strips.
Cover the potatoes with cold water and leave to soak for 2-3 hours at room temperature. Drain and pat dry. - Pour 5 cm of vegetable oil into a saucepan with a thick bottom and heat to 150°C.
Deep-fry the potatoes, dropping them in small batches into the hot oil, for 4-5 minutes, until soft. Transfer each batch to dry paper towels. - Once all the potatoes are fried, increase the temperature and heat the oil to 200°C.
Place the potatoes back in the oil and continue frying until golden brown and crispy, transferring to new paper towels.
Sprinkle fries with sea salt and serve with a mixture of mayonnaise and ketchup.
