A crunchy granola streusel and store-bought caramel sauce transform baked apples into a delicious dessert. Slice the apples into accordion-shaped slices and bake in the oven. For this recipe, use firm varieties that won't fall apart in the oven, such as Gala or Honeycrisp. Serve warm with whipped cream or a scoop of vanilla ice cream. It's like apple pie, only much healthier!

Ingredients:

  • 3 tablespoons unsalted butter, melted
  • 2 large, firm baking apples, such as Gala or Honeycrisp
  • 3 tablespoons light brown sugar
  • 1/4 cup vanilla granola
  • 2 tbsp. flour
  • A pinch of sea salt
  • 1/4 cup store-bought caramel sauce
  • A little lemon juice
  • Whipped cream or vanilla ice cream, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C. Grease a 20x20 cm baking pan with melted butter.
  • Step 2
  • Peel the apples, cut them in half, remove the cores, and place them flat side down. Using a sharp knife, score each apple 0.2 cm apart; do not cut all the way to the bottom. If you score too close together, the apples will fall apart. Place the apples flat side down in the prepared baking dish.
  • Step 3
  • In a small bowl, mix 2 tablespoons melted butter with 2 tablespoons brown sugar using a fork until it forms a paste. Brush the mixture over the apples. Cover the pan with foil and bake until the apples are tender when pierced with a knife, about 20 minutes.
  • Step 4
  • Meanwhile, prepare the streusel. If there are any large lumps in the granola, place them in a bag and crush them with the bottom of a measuring cup into fine crumbs. In a bowl, use a fork to mix the granola with the flour, salt, remaining 1 tablespoon brown sugar, and remaining 1 tablespoon butter until the granola is moistened and the mixture becomes lumpy.
  • Step 5
  • Remove the foil from the pan and spoon the streusel onto the apples, getting into the slits and gently separating them with the tip of a knife. Return to the oven and bake, uncovered, until the apples are soft and the topping is golden, another 20 minutes.
  • Step 6
  • Microwave the caramel sauce in a small bowl until just warm, about 45 seconds. Stir in the lemon juice. Transfer the apples to plates, drizzle with caramel sauce, and garnish with whipped cream.
