With the arrival of autumn and the apple harvest, this fruit becomes a staple in homemade desserts in many countries. In the West, soft caramel apples on sticks are also very popular. This delicacy is loved by both children and adults. To ensure the apples are delicious and easy to eat, they need to be coated in soft caramel, which will develop a pleasant texture once it hardens. For this dessert, it's best to use crisp, sweet and sour apples. Coat them in the perfect creamy caramel and, if desired, roll them in any toppings. This could be colored sprinkles, crushed nuts, coconut flakes, or whatever you prefer.


Ingredients:

  • 2 tbsp. sugar
  • 1/4 cup light corn syrup
  • 0.5 cups of water
  • 0.5 cups heavy cream
  • 2 tbsp (30 g) butter
  • 1 tsp vanilla extract
  • A pinch of salt
  • 6 Fuji apples, Granny Smith
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small saucepan, combine 2 cups sugar, 1/4 cup light corn syrup, and 1/2 cup water. Bring to a simmer over medium-high heat, stirring until the sugar is completely dissolved. Cook, shaking the pan (but not stirring), until the mixture turns light amber and reaches 325°F (160°C) on a candy thermometer, 8 to 10 minutes. Remove from the heat; slowly whisk in 1/2 cup heavy cream, then 2 tablespoons (30g) butter, 1 teaspoon vanilla extract, and a pinch of salt. Return to low heat and whisk until smooth.
  • Step 2
  • Let the caramel cool until it's thick enough to coat the back of a spoon. Insert skewer sticks into 6 Fuji or Granny Smith apples, stem-side down, and dip them in the milk caramel. Drain the excess caramel and, if desired, roll in the topping. Then cool on a parchment-lined baking sheet sprayed with cooking spray.
