"Green Goddess" is a refreshing sour cream and mayonnaise dressing with a bouquet of aromatic fresh herbs, the flavor of which is enhanced by anchovy fillets. Try it on your next potato salad, and it will seem like something completely new.

Ingredients:

  • 900 g fingerling potatoes, cut in half
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 1/3 cup chopped fresh parsley
  • 1/3 cup chopped fresh chives
  • 1/4 cup chopped fresh tarragon
  • 2 anchovy fillets
  • 1 clove garlic, minced
  • 1 tbsp capers
  • Juice of 1 lemon
  • 3 hard-boiled eggs, peeled and chopped
  • 6 strips bacon, chopped and fried
  • 4 green onions, thinly sliced
  • 2 stalks celery, thinly sliced
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the potatoes in a large saucepan and add enough water to cover; season with salt. Bring to a boil, then reduce heat and simmer until tender, about 12 minutes. Drain and let cool.
  • Step 2
  • Combine mayonnaise, sour cream, parsley, chives, and tarragon in a blender. Add anchovies, garlic, capers, lemon juice, 1/2 teaspoon salt, and a pinch of freshly ground black pepper; blend until smooth.
  • Step 3
  • Combine potatoes, eggs, bacon, green onions, and celery in a large bowl. Add about 1 cup of the dressing and toss to coat. Season with salt and pepper to taste.
