This refreshing Green Goddess dressing is a delicious way to use the bountiful harvest of early spring and summer greens. You can make it with any herbs you have on hand, combining their fragrant flavors, such as parsley, basil, chives, and tarragon. All the herbs are pureed in a food processor along with the base of this dressing—a mixture of mayonnaise and sour cream. Add mustard, garlic, and Worcestershire sauce for flavor, and the dressing is perfect for any salad, green or vegetable. Place it in the center of the table, and arrange blanched vegetables around it—a healthy appetizer while you wait for the main course.


Ingredients:

  • 1 cup mayonnaise
  • 1/3 cup sour cream
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tsp Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 4 tbsp chopped fresh chives
  • 2 tbsp chopped fresh tarragon
  • 1 clove garlic, peeled and coarsely chopped
  • Crudite (blanched radishes, cauliflower, broccoli and sugar snap peas), for serving
  • Salad greens, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

  • Combine the mayonnaise, sour cream, lemon juice, Worcestershire sauce, mustard, basil, parsley, chives, tarragon, and garlic in a food processor and process until smooth, scraping down the sides of the bowl as needed.
