These burgers are literally bursting with greens. Gather all the fresh herbs you have (the more varieties, the better), add jalapeño jelly, and jalapeño peppers themselves – you'll have a flavorful glaze for the beef patties. Brush them with the glaze while grilling and serve them with avocado, cheese, and potato chips.

Ingredients:


Cutlets
  • 700 g of ground beef with 20% fat content
  • 1.5 tsp coarse salt
  • 1 tsp ground cumin

Glaze
  • 1 tbsp. jalapeño jelly
  • 1/4 cup coarsely chopped fresh cilantro
  • 1/4 cup coarsely chopped fresh dill
  • 1/4 cup coarsely chopped fresh mint
  • 1/4 cup coarsely chopped fresh parsley
  • 2 green onions, coarsely chopped
  • 1 jalapeño, finely chopped (with seeds)

Innings
  • 4 hamburger buns, wrap in foil and grill over indirect heat for 15 minutes
  • 4 slices pepper jack cheese
  • Lime wedges for squeezing with juice
  • 4 handfuls of jalapeño-flavored chips
  • 2 avocados, mash with salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cutlets:

    Place the ground beef in a large bowl and gently break it up to avoid it becoming one big lump. Sprinkle with salt, cumin, and a few turns of black pepper.
  • Step 2
  • Mix the minced meat with your fingers, being careful not to compact it. Divide into 4 equal portions and form into balls. Cover and let sit at room temperature for 2 hours.
  • Step 3
  • Glaze:

    In a medium bowl, combine the jelly, cilantro, dill, mint, parsley, green onions, and jalapeño. Stir to combine.
  • Step 4
  • Preheat grill to 200°C.
  • Step 5
  • Flatten the meatballs or form each ball into a patty slightly larger than the circumference of the buns. Place over direct heat and cook until the meatballs release from the grate, about 4 minutes. Flip the meatballs over, move them to indirect heat, and immediately spoon a spoonful of glaze over each one. Continue cooking until desired doneness is achieved.
  • Step 6
  • Place cheese and a patty on the bottom half of each bun, drizzle with lime, and top with a handful of chips. Spread avocado on the cut sides of the top buns and top the burgers.
