Avocado isn't a traditional ingredient in Green Goddess dressing, but it makes an equally delicious, healthy, and low-calorie version. Avocado makes a great substitute for higher-fat mayonnaise and sour cream. Blend it in a blender with semi-skimmed buttermilk and add fresh tarragon and green onions for flavor. The avocado gives the dressing a creamy, thick consistency, just like the original, and a more vibrant green color. It's perfect for dressing fresh vegetable salads and as a healthy snack with raw vegetable sticks for dipping.


Ingredients:

  • Half a ripe avocado, peeled
  • 3/4 cup low-fat sour milk or kefir
  • 3 tablespoons white wine vinegar
  • 2 tablespoons coarsely chopped fresh tarragon leaves
  • 1 green onion, coarsely chopped
  • 0.5 tsp salt
  • 1/4 tsp freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Place all ingredients in a blender and blend until smooth. The dressing can be stored in an airtight container in the refrigerator for 2-3 days.
