This light and elegant dessert is the perfect end to a hearty dinner. To make the granita, tart-sweet pomegranate juice is combined with spiced rum, crisp lime juice, and crushed lavender flowers. Freeze everything in a wide, shallow bowl and fluff it with a fork every 20 minutes for the first few hours to create a delicious mass of loose ice crystals. Once completely frozen, scrape it again and serve it into elegant glasses, garnished with lavender flowers. A perfect treat for a special occasion.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 cups of pomegranate juice
  • 1 teaspoon chopped fresh lavender flowers + flowers for garnish
  • 2 tablespoons freshly squeezed lime juice
  • 0.5 cup spiced rum (optional)

Cooking the dish according to the recipe:


  1. Combine the pomegranate juice and lavender in a chilled stainless steel bowl. Add lime juice and rum, if using. Freeze until the mixture is set around the edges, 20-25 minutes.
  2. Fluff the granita and continue freezing, scraping it with a fork every 20-25 minutes until it becomes fluffy and slushy, about 2.5 hours; then cover and freeze overnight. Scrape the granita with a fork and spoon it into martini glasses. Garnish with lavender flowers.
