Ingredients:

  • 2 cups premium flour
  • 1 teaspoon chia seeds
  • 3/4 cup milk
  • 3/4 cup vegetable oil
  • 2 eggs

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a bowl, combine 2 cups flour, 0.5 cups sugar, 1.5 teaspoons baking powder, 1 teaspoon chia seeds, and 0.5 teaspoon each baking soda and salt. In a separate bowl, combine 3/4 cup each milk and vegetable oil, 2 eggs, 1 tablespoon lemon zest, and 1 teaspoon vanilla extract; stir the liquid mixture into the flour mixture.

  • Line a 12-cup metal muffin pan with paper liners; spray with cooking spray. Spread the batter evenly among the muffin pans; bake at 350°F (175°C) until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.
